I have long been a cocktail connoisseur. From martinis to mules, cocktails to toddys, highballs, lowballs and everything in between, I’m always finding myself trying new recipes and dabbling with fun ingredients. And the more cocktails I make, the more I realize a hidden, expensive wastefulness that comes with them.

Let’s say you want an Old Fashioned—the classic American cocktail. To make one or two, you’re required to purchase ingredients capable of making upwards of 12-15. Whole bottles of mixers. An entire jar of maraschino cherries. Fresh fruit and garnishes with a limited shelf life. Sure, the leftover supply is nice to have on-hand. But if you don’t use it in a timely fashion—especially the fruit—your stock will just sit on the bar, collecting dust and slowly expiring. It’s a waste of materials. And money.

Not surprisingly, I saw this trend across all kinds of cocktails. So that got me thinking. Why not offer smaller batches of ingredients?
